So what do you do if you are lactose intolerant, need to watch your weight and must have a good daily source of calcium? not to mention you absolutely adore cheese? ....I got very frustrated looking for a lower calorie source of goat cheese until I discovered I can make my own and it's so so easy and delicious!
Of course you can make this cheese with any yogurt!
You will need:
one or two tubs of low fat goat yogurt ( I love "Liberte" but many other brands work just as well)
Sea salt
A deep bowl with a sieve that can sit nicely above it with enough space to allow water to drain underneath.
Flour sack towel, or cheese cloth or a cloth diaper works great too!
mix well 1 tablespoon of salt right into each one of the yogurt tubs and pour the yogurt into the toweled sieve above the bowl.
pull up all corners of the towel and gather them together very tightly (make sure it's not too tight and the yogurt is sifting through!)
close with a clasp.
let the water in the yogurt drain down for a few hours OUT of the fridge, then lift the sieve, pour the water out and place the bowl in the fridge overnight.
And that's it! it's ready! you can leave it to drain for another 12 hr if you want it less creamy.
Here it is the next day, so easy!! open up the towel
drop into a container (I love this part)

Its easy and hygienic cheese making recipe. It is good to make it at home with children. I know little recipe but not proper. Now I will try this for sure.
